Pork Slope's Hurricane Sandy Benefit

Dale Talde, Dave Missoni, and John Bush hosted a fundraiser at Pork Slope last night to benefit victims of Hurricane Sandy. Wyatt Cenac and Eugene Mirman were amongst those tending bar, ?uestlove showed up around midnight and DJ'd a set of 80s jams and funky Xmas tunes, and two lucky attendees won tickets to the February 5th Nets vs. Lakers game at Barclays Center.

Sandy Benefit Tomorrow Night at Pork Slope

Dale Talde and co. have put together a fund raiser to benefit Hurricane Sandy victims. Tomorrow night, December 18th, from 9pm - 2am, comedian Wyatt Cenac (former Daily Show correspondent) will be behind the bar with owner John Bush and resident Pork Slope bartender Phil McNamara. All tips and sales of the "Slippery Slope" special running tomorrow night will go to the Brooklyn Recovery Fund. The special is a shot of Jameson and a can of Blue Point Toasted Lager. For $20, you can buy into a raffle for the chance to win two tickets to the February 5th Nets vs. Lakers game at Barclays Center. All proceeds from the raffle will also go to the BRF. The Roots drummer Questlove will be there to DJ a late night set too. It's a win win.

Park Slope's Talde Gets a Star

[kara zuaro] Dale Talde, David Massoni, and John Bush are neighborhood guys. At the root of their partnership and business model is a shared desire to provide good food and a casual dining experience. Dale Talde recently became a partner at Thistle Hill Tavern, Massoni and Bush's first restaurant in Park Slope, where he is now in charge of the menu there. Talde, the trio's most ambitious restaurant, was less than a year old when the team opened Pork Slope, an American Honky Tonk serving chef Talde's take on bar food. As for the restaurant, Talde's immediate success when it opened in January has given the Park Slope eatery serious culinary momentum, the likes of which has brought in Pete Wells, who filed a one-star review on the restaurant today.

"About a month into its run," Wells writes, "the dining room ticked along briskly, and the cooking, which could be called pan-Asian if that didn’t sound so alarming, was smart and skillful." That was before Talde was in charge of three menus, hard work to say the very least. The best way to deal with that is to be at three places at once, but science hasn't made that possible yet. In his review, Wells mentions how whenever Talde was in the kitchen, "The food was back to its old, confident self."

The review seems to suggest that had Talde been in the kitchen on each of the three visits Wells made before he could file his review, an unwritten (written?) Times requirement, he may have stamped it with a second star. Talde, no stranger to competition, is ready to do what it takes to right the wrongs. He had this to say about the review via Twitter:

Pork Slope Preview Party

Pork Slope is the highly anticipated bar/restaurant from Dale Talde, David Massoni, and John Bush. The trio got together and opened Talde in Park Slope back in January. The restaurant was one month old when the triumvirate announced they were taking the former Aunt Suzie's space on 5th Ave between Garfield and Carroll a few blocks away. The time has come. Pork Slope is opening this Saturday. Dale Talde and co threw a little shin dig last night to show off their goods and Digest NY got an invite. Now we have some pictures and a hangover we'd like to share.

Signage Up At Pork Slope

Last week, Digest NY introduced Triple Play to bring continued coverage on the development of Calexico, Terroir, and Pork Slope; all opening within the same two blocks on 5th Avenue in Park Slope.  Today's update is to reveal the signage up at Pork Slope, set to open two weeks from tomorrow on August 18th.

Another new sign up on the front door encourages job seekers to "Inquire Within."  This could be done through a propped open front door.  Digest NY knocked and got a peak but construction workers were reluctant to permit photos without consent from the owner's, who weren't there at the time.

Pig Island Sails to Governor's Island Labor Day Weekend

Pig Island is an annual celebration of pork and booze held on Governor's Island.  Tickets are available here.  General admission is $85 but there's an Early Bird package for $70 available for purchase until August 17th.  Ticket price includes food and booze.

The event includes 25 of the best chefs from around the city, butchering and cooking demos, local beer, local pigs, and local wine from New York State's Finger Lakes and North Fork.  King Phojanakong (featured in the video) will be there.  As will Anthony Sasso of Casa Mono and John Stage, the man behind Dinosaur BBQ.  Dale Talde will also take a boat to the island for the event September 1st.  It'll probably his first chance to leave Brooklyn as his latest project Pork Slope, opening August 18th, will be just two weeks old.

Triple Play: Coverage of Three Projects Opening in Park Slope

The two blocks of 5th Avenue between 1st and Carroll Streets in Park Slope are going to be quite the culinary nexus.  Construction is well underway on three different projects that will each have their own unique influence on Park Slope's palate.  Digest NY is introducing Triple Play to provide you, kind reader, with updates as work progresses on Pork Slope, Calexico, and Terroir.

Here Piggy Piggy

The trio behind Talde are looking to open Pork Slope sometime in July.  The drink menu is inspired by the great state of Kentucky.  John Bush is the beverage director and he just got back from a trip to bourbon country, "I was drinking a lot of bourbon you can’t get up here—I was on the Bourbon Trail."  He will be behind the 35-foot bar when Pork Slope reveals its snout to the neighborhood.

Edibles will include pulled pork, brisket, smoked meats, and barbeque ribs.  Dale Talde, a native of Chicago, is also planning a Chicago-style Italian beef sandwich that he explains as a "French Dip sandwich meets a Chicago Beef Steak."

The tin ceiling and the walls have a fresh coat of paint and the pool table is already in place at 247 5th Ave, between Garfield and Carroll.
